We had a Tuesday night in, which is a break from our usual routine, but we needed a quickly-prepared meal. We poured a jar of Marks & Spencer Rich Ale & Thyme Cooking sauce over some Lincolnshire sausages and casseroled them. The sage in the sausages can clash with tannins in some reds but I read that Chianti goes well. However, we went for Monte Nobile Riserva Squinzano 2005, a Puglian red from Tesco. There was a sweetness in the dish that went with the fruitiness in the wine. There was also a lovely savoury aftertaste in the sausage casserole that enhanced the black pepper, vanilla and chocolate flavours in the wine.
