Teresa did one of her Beef Stews in Red Wine that is loosely based on the French dish Bifteck Marchand de Vin. She uses braising steak and cooks it for longer to produce a very rich and savoury dish. We opened a bottle of De Bortoli Cabernet Merlot 2008 from the Sunday Times Wine Club. Cabernet Merlot blends are usually reliable with beef in red wine. This was not a perfect match but still very pleasant.
