We wanted to use up the leftover pork from Sunday (see 18th Sept) on a midweek meal. We found a recipe in Supercook for leftover chicken called Minced Chicken that looked good and we thought it would be fine to to do it with the pork intead. It had a cream and mushroom sauce, so we thought a Chardonnay would be good. We had a bottle of Santa Julia Chardonnay 2010, an Argentinian white from Waitrose. It actually says on the bottle it goes with white meats in creamy sauces. We found the wine fresh, dry with grapefruit, lemon, apple and possessing minerality. It was also creamy and buttery, but not overly so. A very enjoyable wine that was a good match with the pork.
